Introduction

Unless you've been living under a rock for the past few decades, chances are you've come across the ketogenic diet, or simply "keto". It's been touted for a range of benefits including weight loss, maintaining stable insulin and blood sugar levels, and treating epilepsy. 

One of the biggest stumbling blocks often encountered by proponents of the keto diet is... monotony. Admittedly the prospect of eating to the point of satiety (unlike classic low calorie diets) is thrilling - but there's only so much bacon, butter and eggs one can eat before the diet loses its appeal and the shine wears off. This is evidenced by the vast number of keto-recipe communities teeming with keto dieters online.

Chicken Burrito Bowl

Cook time: 20 -25 min 

Servings: 4

Ingredients:

- 1 lb ground turkey or chicken

- 1 tablespoon olive oil

- 1 bell pepper, diced

- 1 red onion sliced 

- 1 zucchini, diced

- 1 cup cauliflower rice

- 1 teaspoon cumin

- 1 teaspoon chili powder

- Salt and pepper to taste

- 1 cup shredded lettuce

- 1/2 cup tomatoes, diced

- 1/4 cup shredded cheese

- Avocado slices for topping


Instructions:

1. In a skillet, heat olive oil over medium heat. Add ground turkey or chicken, cook until browned.

2. Add diced bell pepper, onion and zucchini to the skillet. Sauté until veggies are tender.

3. Stir in cauliflower rice, cumin, chili powder, salt, and pepper. Cook until the cauliflower rice is heated through.

4. Assemble your bowl: Start with a base of shredded lettuce, add the turkey or chicken and veggie mixture, top with diced tomatoes, shredded cheese, and avocado slices.

5. Optional: Drizzle with your favorite keto-friendly dressing and enjoy!
